Over the weekend I made a pork loin roast. The grocery store had a four day meat sale and I got the roast for a great price. It was almost three pounds, so we are getting a few meals from it.
The first meal was when I marinated the roast in Italian Dressing and other seasonings. Then after it was cooked through, I glazed it with an apricot glaze. Oh, was it ever good! Here it is on my plate, after I had already cut into it!
